Muscovy duck Cairina moschata

The Muscovy is the exception among domestic ducks. It is not descended from the mallard but from stock native to the tropics of Central and South America, domesticated separately, and it sits in its own genus, Cairina. It is raised for lean breast meat and, in village systems, for its reliability as a natural brooder. Sexual dimorphism is extreme: FAO gives 4.5 to 5.5 kg for males against 2.3 to 2.8 kg for females, local scavenging birds characterised in Benin averaged 2.80 and 1.80 kg, and growth modelling puts the theoretical maximum near 6,123 g in males and 4,051 g in females, with males pulling ahead from the third week. Egg output is low — 30 to 40 a year under extensive management, 60 to 80 in the Benin flocks — and strong broodiness suppresses it further. The fact that changes hatchery practice is incubation: Muscovy eggs take 35 days against 28 for mallard-derived ducks, and the sterile mule duck produced by crossing Muscovy drakes onto Pekin-type females sits between them at 30 to 32 days.

DISPUTED by one day, and stored as the 35-day figure because two independent statements on the same husbandry reference agree: the duck-breed article ('35 days for the Muscovy versus 28 days for ducks') and that site's incubation table ('Muscovy duck | 35'). The competing figure is FAO's rural poultry manual, which states 36: 'It eats grass, as do geese, and has a similarly long egg incubation period of 36 days (compared with that of ducks - 28 days)' (FAO y5169e03). 35 and 36 have NOT been merged into a 35-36 range, because neither source states a range - each gives a point. Treat 35 as the expected hatch day and 36 as a plausible one-day tolerance, not as a measured band.
Mature weight, sexes separated: males 4.5-5.5 kg, females 2.3-2.8 kg per FAO's prose; the same chapter's Table 2.5 gives the Black/White Muscovy as 4.5 kg drake / 3.0 kg duck, so the female upper end is 2.8-3.0 kg depending on which FAO figure is taken. FAO's 5.5 kg is described as what a male 'can become', i.e. an upper bound rather than a typical male weight. Not a growth-stage or slaughter figure. FAO names no breed beyond the Black/White colour variety.
